Zedoary Root is the dried rhizome of Curcuma zedoaria, a perennial plant in the ginger family (Zingiberaceae). It has a white or pale yellow interior with a strong aromatic scent and a bitter taste, and it’s traditionally used in both cooking and traditional medicine systems like Ayurveda, Unani and folk remedies.
